...........For the Mutton Chopped Mutant..............

The Mutant and I were recently discussing a favourite meal of mine so - here it is - the recipe.
Enjoy :)
Balsamic Beef and Mushrooms.
1kg of skirt beef or some similar stewing type of beef cut.
2 large Red Onions
4 cloves of garlic
6 good sized portabello mushrooms - shitake's can be used too.
Balsamic Vinegar
Full bodied red wine - cab sav or a shiraz viognier is good
Paprika
Oregano
Thyme
Chilli Flakes
Put a good splash of olive oil into a hot wok with a small knob of butter.
Slice the onions in half, then into half rings and sweat in the wok.
As they soften add the garlic - finely sliced - and the mushrooms that have been cut into 1 cm slices.
Slice the beef into 1 cm (ish) strips and add to the wok to colour with the onions garlic and mushrooms. Before adding the liquids, be sure to season generously with salt (kosher is best but sea salt is fine too) and ground pepper.
Once they have browned - add 1 cup of wine, 1/4 cup of balsamic vinegar, the paprika, oregano, thyme and chilli flakes (all to taste). Also add a small paste of 1 tablespoon of flour mixed with some water and stir it in.
Add enough warm water to cover the ingredients and let simmer for at least 2 hours. (I prefer 3 hours cooking time myself).
The liquid will reduce and it will smell GORGEOUS.
Serve over rice that has wilted spinach in it - OR - proper potato mash that has been made with butter and cream.
Heaven - guaranteed to be one amazing meal :)
And it is even better on the next day as lunch or dinner.
